Going back to your Profile - Default Information and changing the field Default Storeroom for Self-Service Requisitions is not ideal. On the other hand, for a global organisation there could be many storerooms and a lot of data that you need to avoid downloading especially if you are going to work offline.
As you cannot predict how storerooms will be used by a Maximo client, I think there should always be the flexibility to add additional queries to a mobile application, if those queries defined in the Object Structure app help to control the volume of data that is downloaded when working offline or viewed when online.
But when a query involves multiple storerooms, then there should be a way to filter to one storeroom. A filter button next to the Search bar, perhaps.
When Maximo clients do have many storerooms across multiple sites then they should also be deploying Storeroom based security (Security Groups) which will help to reduce the volume of records that could be downloaded and would also restrict the selection of storerooms in the filter.

I do have a question, would you consider this functionality or the ability for users to choose Storerooms to work in the better solution to the problem?
